There are a few things it helps diagnose. When everything is working fine and you're happy you can "Pause Backup" as often as you like, the recommendation to do it less often is only for PROBLEM situations, not normal ones. But if you let it run for 7 hours you have done that step anyway. Sometimes you just have to let Backblaze power through whatever it wants to do. But if you are asking when you should click "Pause Backup", wait 20 seconds, then click "Backup Now" it doesn't really matter, just try not to do it more often than once every 4 hours - it won't hurt anything to do it more often, but it prevents progress from being made.
